Claire's Special

This is an oyster that we selected before refining for its regular shape, roundness and thickness. Its more pronounced concavity indicates a larger volume of meat.

Fine de Claire Verte Label Rouge

The Fine de Claire Verte Label Rouge, an official label awarded by the French Ministry of Agriculture, is subject to very demanding control standards.

Its green color, so prized by consumers, is obtained thanks to the presence in the oyster beds of the blue navicula, a microalga filtered by the oyster, which retains its pigment.
